About Us

Woolshed proprietors Fleur & Jim Whelan are passionate about great food and wine and excellent service. With over thirty-five years' combined experience in the hospitality industry, they have added their distinctive stamp to the Emerald Bank Woolshed since taking over the business in September 2004.

Jim, the Woolshed's Executive Chef completed his initial training in Ireland and then, over six years, honed his skills in some of London's top a la carte restaurants. Immigrating to Australia in 1994, he spent ten years as a Head Chef in iconic Melbourne establishments including The Melbourne Hilton on the Park, the Members Pavilion at the MCG, and the Melbourne Town Hall. Stints at the Melbourne Convention Centre and the Centre Ivanhoe further expanded his mastery of catering to the contemporary Australian palate.

Jim's background enables him to skillfully design menus to suit a wide variety of tastes. He is delighted to discuss your specific requirements and design a unique menu just for you.

Fleur, originally from Shepparton, studied Hospitality Management and has postgraduate qualifications in Marketing. Spending many years at Melbourne Hilton on the Park and the Melbourne Park Function Centre (National Tennis Centre), Fleur nurtured her passion for designing exceptional and stylish events. Given her love of "the people aspect" of the business, and her tenure in the industry, she ensures that choosing the Woolshed for your function is a smooth and stress-free experience.
